Ingredients

  • 4 potatoes, peeled and chopped
  • 1 teaspoon butter, melted
  • ½ tablespoon olive oil
  • 1 small green onion, chopped
  • 1 green pepper, chopped
  • ¼ teaspoon savory
  • 1/3 teaspoon thyme
  • ¼ teaspoon red chili flakes
  • Salt and black pepper, to taste
  • 3–6 eggs, cooked to your liking (for serving)

Breakfast Potato Hash Directions

    1. Preheat the air fryer to 390°F (198°C) for 5 minutes.
    2. In a skillet, melt the butter over medium heat, then add the olive oil and cook for 30 seconds.
    3. Sauté the chopped green onion for 1 minute, then add the peeled, chopped potatoes and chopped green pepper. Cook for 5 minutes, stirring occasionally.
    4. Season with savory, thyme, red chili flakes, salt, and black pepper.
    5. Transfer the potato mixture to the air fryer basket and air fry for 18 minutes, shaking halfway through for even crisping.
    6. While the hash cooks, prepare the eggs in a separate pan according to your preference (fried, scrambled, or poached).
    7. Once the potato hash is crispy and tender, divide it among plates and top each portion with an egg. Serve immediately.

Notes

Chef's Tips: For extra crispy potatoes, shake the basket halfway through air frying. Use a mix of sweet potatoes and regular potatoes for a flavor twist. Top with fresh herbs, hot sauce, or a sprinkle of cheese before serving.
